Grown in Italy in predominantly sandy soil at an altitude of between 50 and 200 metres above sea level, the vines are on average between 100 and 150 years old.
The olives are grown using traditional open-row cultivation, with around 150–160 trees per hectare, and the harvest takes place between late September and late October. Harvesting is carried out manually using combs and mechanical shakers. Large nets are laid on the ground to catch and collect the olives. The harvested olives are transported in crates or bins to the mill for pressing, which takes place immediately.
The oil is of the Gentile di Chieti variety; it is cold-pressed using a continuous three-stage process and stored in stainless steel tanks sealed under nitrogen at a controlled temperature.
It is packaged in dark green glass bottles with non-refillable caps.
