Type of harvesting:
olives: by hand with rakes and mechanical beaters. Large harvest nets are placed on the ground to collect the olives. The olives are transported in crates or bins to the mill for milling, which takes place immediately.
hot peppers: once ripe they are picked by hand and left to dry.
Extraction: from cold in a three-phase continuous system.
Stocking: sealed stainless steel tanks.
Storage: Store in a cool, dry place and away from heat sources
Minimum storage period: 18 months
Serving suggestions: the oil infused with hot pepper makes first courses lively. It gives intensity to sauces with or without tomatoes. Ideal when served with meat or fish, as well as vegetables or pulses.
