Vinification: Crushing and soft pressing. During the pressing contact with grapeskins for 1-2 hours for light colour extraction. Drained clarified must with a stabulation at a temperature of 2-3 degrees for 24 hours. After 24 hours fermentation stage with selected yeasts and fermenting temperature between 12 and 14°C. After fermentation, first racking in stainless steel and before filtering and proteic and tartaric stabilization 2 months of bâtonnage in order to give the sensation of fat in the mouth.
