Average age of olive trees: 100-150 years.<\/p>\n<p><strong>Type of cultivation:<\/strong> traditional in vases, about 150 \u2013 160 trees per hectare.<\/p>\n<p><strong>Harvest time:<\/strong> beginning of September \u2013 beginning of October.<\/p>\n<p><strong>Type of harvesting:<\/strong> by hand with rakes and mechanical beaters. Large harvest nets are placed on the ground to collect the olives.<\/p>\n<p><strong>Extraction:<\/strong> from cold in a three-phase continuous system.<\/p>\n<p><strong>Stocking:<\/strong> stainless steel tanks sealed under nitrogen at a controlled temperature.<\/p>\n<p><strong>Storage:<\/strong> Store in a cool, dry place and away from heat sources<\/p>\n<p><strong>Minimum storage period:<\/strong> 18 months<\/p>\n<p><strong>Serving suggestions:<\/strong> light food, boiled fish, mayonnaise and for the preparation of vegetable paste.<\/p>\n<p><strong>Packaging:<\/strong> dark green glass bottles.
